Use Charcoal For Delicious Barbeque Cooking

Let’s learn the recipe of grille rib pork chops with sweet and tangy peach relish.

Total time: 1 ½ hour
Active time: max 30 minutes
Yield: Makes 6 servings

A 1-inch-chunky rib pork chop is big enough to take a powerful spot on the plate. Brine the chops, this brine works rapidly and it’s worth it for the juiciness and taste it imparts to the meat. Red onion helps deliver porcine satisfaction. You need some boiled green beans and a green salad.  

Brine: Take 8 cups of water, 1 cup coarse kosher salt and 1 cup sugar.  

Pork Chops: Take 6 bone-in rib pork chops, freshly ground black pepper, vegetable oil for grill rack and 1/3 cup liquid from sweet and tangy peach relish

Method for preparation:  

Make Brine: In a wide pot whip together 8 cups water, salt and sugar until sugar and salt are dissolved properly. Add pork chops to brine and let stand at room temperature for one hour. Make grill for direct-heat grilling over medium-hot charcoal.

Take out pork chops from brine, removing brine, and pat chops dry with many coatings of paper towels. Season chops with pepper. Oil grill rack and grill chops, covered only if you are making use of a gas grill, turning over occasionally and moving around if flare-ups arise, until it becomes brown in color for total 2 to 3 minutes.

Move chops to area with no coal beneath then wrap with lid, and grill, turning and brushing with liquid, until thermometer placed in straight into center of chops as close to bone at 145°F for a little pink meat, about 2 to 3 minutes longer. Move chops to a platter and keep them in a plate for 5 minutes before serving it in front of family members.
Serve chops with peach relish.
